Job Responsibilities

Under general supervision, directs and instructs cooks, other dietary service personnel and offender or juvenile workers in preparing and cooking food, creates and implements menus and serves offenders' and juveniles' meals; verifies menu implementation and reviews and makes recommendations for food preparation; participates in food preparation and cleaning activities.

  1. Directs and instructs dietary staff and offender and juvenile workers in cooking and preparing foods, serving meals to offenders and juveniles and assisting individuals in food selection; assigns, reviews and verifies staff assignments are implemented accurately; provides guidance and training to staff; reassigns staff to meet operating needs; advises supervisor of staff work performance.

  2. Operates standard kitchen equipment and makes minor adjustments and repairs to maintain current health and safety standards for devices and tools; directs or instructs staff and offender and juvenile workers in the use of meal preparation devices and tools.

  3. Ensures that work areas are equipped with necessary supplies; prepares reports of daily cooking operations and maintains food and supply records; makes changes to the master menu based on food availability and recommends requisition of food and supplies to supervisor.

  4. Directs and instructs dietary staff and offender and juvenile workers in the cleaning and sanitizing of all work areas, store rooms, refrigerators, etc., to meet regulations and maintain safe, sanitary, and healthy conditions.

  5. Coordinates with senior staff in planning meals; consults with medical staff or nutritional specialists to determine the best methods for special diet preparation; exercises control over food items, supplies and equipment by ensuring all work and supply areas are properly secured at the end of assigned shift.

  6. Completes all training requirements and educational workshops to maintain current knowledge and skill level.

  7. Selects and tests new types of kitchen equipment or recipes.

  8. Directs others and participates in the proper disposition of cooked or prepared foodstuffs or in canning or baking activities.

  9. Cooks and prepares food and meals; cleans and sanitizes food preparation and storage areas.

  10. Performs other duties as required or assigned, which are reasonably within the scope of the duties enumerated above.

Knowledge, Skills, and Abilities

  • Requires working knowledge of food values.
  • Requires working knowledge of health and safety requirements of food service.
  • Requires ability to direct and instruct others in various areas of food preparation and in the sanitation of kitchen and dining areas.
  • Requires ability to estimate the quantity of food items and kitchen supplies needed.
  • In addition to having a written and spoken knowledge of the English language, candidates may be required to speak and write a language other than English at a colloquial skill level. Some positions may require candidates to possess specific communication skills, such as reading Braille, performing sign language or other forms of manual communication.

Physical Requirements

  • Requires physical ability to lift and/or carry heavy items and to push or pull carts laden with food or supplies.
  • Requires ability to work under physically demanding conditions, such as extreme temperature changes, exposure to cleaning agents and/or standing for extended periods of time.

Education Degree

  • Requires knowledge, skill and mental development equivalent to the completion of high school and two years of cooking experience, which provides extensive knowledge of materials, methods and equipment used in preparing food on a large-scale basis.
  • Qualifying state employees in the Upward Mobility Program may complete combinations of specific proficiency tests and training programs leading to a certificate of proficiency in lieu of the stated education and experience requirements for this class.
