FOOD SERVICES PROGRAM MANAGER

Position Overview:

This position plans, develops, coordinates, and directs a large-scale food services program for the Department of Juvenile Justice at the Illinois Youth Center Lincoln (Monarch) facility and is under administrative direction from the Assistant Superintendent of Operations. This position serves as full line supervisor, plans, schedules, and publishes all menus for general and /or special diets, directs initiation and maintenance of proper and healthy sanitation and safety standards, and prepares reports (daily, weekly, monthly, annually) regarding food cost. Essential Functions:

• Plans, develops, coordinates, and directs all phases of the food services program for the facility
• Serves as working supervisor
• Plans, schedules, and publishes all menus for general and/or special diets
• Coordinates food storage and menu needs
• Prepares reports (daily, weekly, monthly, annually) regarding food costs, food types, quantities, numbers, etc.
• Serves as Duty Administrative Officer for dietary
• Performs other duties as required or assigned which are reasonably within the scope of the duties enumerated above

Minimum Qualifications:

• Requires knowledge, skill, and mental development equivalent to completion of four (4) years of college with courses in nutrition, dietetics, or food service management.
• Requires three (3) years of progressively responsible administrative experience.
•  Requires possession of either: a) Certification as a Registered Dietitian with the Academy of Nutrition and Dietetics, Commission on Dietetic Registration, and in accordance with the rules set forth in the Illinois Administrative Code Title 68, Chapter 8, Subchapter b, Part 1245: Dietetic and Nutrition Practices Act; OR,
  b) a Food Service Sanitation Certificate Issued by the Illinois Department of Public Health, or requires possession of a Certified Food Protection Manager (CFPM) certification from a program accredited by the American National Standards Institute (ANSI) Conference for Food Protection (CFP).

Preferred Qualifications (In Order of Significance):

• Prefers thorough knowledge of modern methods of the storage of foods.
• Prefers thorough knowledge of the modern and appropriate methods of the preparation of foods.
• Prefers thorough knowledge of the modern and appropriate sanitary requirements in a dietary and/or food services setting.
• Prefers knowledge of equipment used in a large-scale food operation.
• Prefers thorough knowledge of dietetics.
• Prefers previous supervisory or lead worker experience.
• Prefers the ability to estimate and budget for future needs and cost of personnel, space, equipment, and services.

Conditions of Employment:

• Requires the ability to pass an IDOC/IDJJ background check.
• Requires ability to pass a drug screen. The use of unauthorized drugs, by an employee, regardless of position held is prohibited.
• Requires the ability to be on call for Duty Administrator Officer duties including nights, weekends, and holidays.

IDJJ serves and houses approximately 150 youth and is responsible for approximately 500 youth on Aftercare in various Illinois’ communities.
