Job Responsibilities

 1.  Serves as full-line supervisor.  

 2.  Supervises all dietary staff assigned.

3.  Plans and presents weekly agendas for meetings with staff. 

4.  Assures that the food received in the department is of sound quality and sanitary nature.

5.  Prepares production sheets for cooks indicating amount of food to be prepared for each meal.

6.  Consults with medical/nursing staff and dietician in the planning and preparation of special diets and menus for facility patients.

7.  Performs other duties as assigned or required which are reasonably within the scope of the duties enumerated above.

Minimum Qualifications

  • Requires knowledge, skill and mental development equivalent to the completion of four years of college with courses in dietetics.
  • Requires one year of professional experience in a large-scale food service program.
  • Requires possession of a current valid certificate as a Certified Deitary Manager (CDM)
  • Qualifying state employees in the employee Upward Mobility Program, may complete combinations of specific proficiency tests and training programs leading to a certificate of proficiency in lieu of the stated requirements for this class.

Preferred Qualifications

  1. Extensive knowledge of dietetics and food services management, including nutritional values, costs and accounting.
  2. Extensive knowledge of modern methods, materials and appliances used in large scale food preparation and service.
  3. Working knowledge of health and sanitary requirements applicable to a large-scale food service.
  4. Working knowledge of agency rules and regulations pertaining to the food services program.
  5. The ability to plan and prepare modified diets and menus.  Requires ability to supervise subordinates in preparing and serving general and special menus and performing other food service functions.
  6. Ability to direct dietetic educational programs and teach food and nutrition principles.
  7. Ability to supervise quantity food preparation and cooking with economy and efficiency.
  8. Ability to judge food materials and to make estimates of requirements and requisitions needed food, supplies and equipment.
  9. Ability to maintain satisfactory working relationships with other employees of the department.

10.Ability to maintain food service records and prepare related reports.

11.Prefer licensure as a Licensed Dietitian/Nutritionist from the State of Illinois, Department of Financial and Professional Regulations.
