Position Overview

Under direct supervision, performs tasks involved in the handling, preparation, cooking, storage and proper disposal of foods in varying quantities during a typical workday on a large-scale basis.  Coordinates cooking operations in the absence of the Cook II. Assists direct care staff and persons served in the preparation of food.

Job Responsibilities

1.  Performs tasks involved in the handling, preparation, cooking, storage and proper disposal of foods in varying quantities during a typical workday on a large scale basis.  Follows a variety of standardized recipes, calculating the amount of each ingredient based on the number of servings.  Makes changes in master menu based on food available.  Operates standard cooking equipment (e.g., stoves, ovens, broiler, and grills), makes minor adjustments and repairs, while observing standards.  Maintains temperatures according to standards for hot and cold foods.  Retrieves meats, dry goods, and other food supplies from storage area and freezers with assistance from other workers.  Reviews menu and participates in the testing of and development of new recipes.

 

 

2.  Equips the working area with a list of supplies for food production on a daily basis.

 

 

3.  Cleans up after self in the cooking area and maintains store rooms and refrigerators in a neat organized manner to maintain sanitary conditions. 

 

 

4.  Coordinates cooking operations in the absence of the Cook II.  Monitors and directs support staff in assigned areas. Assists direct care staff and persons served in the preparation of food when appropriate.

 

 

5.  Performs other duties as assigned or required which are reasonably within the scope of the duties enumerate above.

Minimum Qualifications

  1. Requires knowledge, skill, and mental development equivalent to the completion of high school and six months of cooking experience which provides working knowledge of food preparation and cooking methods on a large-scale basis.
  2. Requires possession of a valid Food Service Sanitation Certificate issued by the Illinois Department of Public Health or requires possession of a Certified Food Protection Manager (CFPM) certification from a program accredited by the American National Standards Institute (ANSI) Conference for Food Protection (CFP). 

 

Qualifying state employees in the Upward Mobility Program may complete combinations of specific proficiency tests and training programs leading to a certificate of proficiency in lieu of the stated education and experience requirements for this class.

Knowledge, Skills, and Abilities

  • Requires elementary knowledge of health and safety requirements of a food service.

Work Hours:  6:00 am - 2:00pm Three weekends off and one on.
