Position Description and Job Responsibilities

Under direct supervision of the Corrections Food Service Supervisor III, monitors offenders in the preparation and serving of food; monitors offenders in clean-up and sanitation procedures; inspects food before, during and after cooking; maintains inventory records; enforces and maintains discipliary, sanitary, security and custodial measures.

30%   Monitors offenders in preparation and serving of food for offenders and in maintaining equipment weighing up to 50 lbs; keeps a record of all food supplies; performs food preparation, food service and sanitation as well as cleaning, sanitation and maintenance of all food service areas and equipment. Inspects, weighs and measures ttems used in food preparation to ensure compliance with established menus and recipes

25%   Monitors offenders in clean-up and sanitation procedures for kitchen equipment and facilities; explains and enforces the rules and regulations covering the assignments of duties; searches offenders and all kitchen areas for contraband; verifies that doors are locked and adheres to all security measures.

20%   Inspects food before, during and after cooking to ensure proper preparation in compliance with recipes and menus; assures attainment and maintenance of the cooking and holding temperatures of food; evaluates the dishwashing operations and adheres to strict cleanliness and hygiene.

15%   Maintains inventory and records of food items used and their expiration dates; prepares requisition orders; maintains stock, inventory and supplies; receives and inspects boxes and containers weighing up to 50 lbs.

05%   Monitors daily activities of offenders allowing food supplies, tools and cleaning supplies to be properly issued and accounted for; reports infraction of rules by inmates for disciplinary action.

05%   Performs other duties as required or assigned which are reasonably within the scope of the duties enumerated above.
 

Minimum Requirements

  • Requires knowledge, skill and mental development equivalent to completion of four years of high school.
  • Requires two years of experience in food preparation in large-scale food operation.
  • Requires completion of an orientation-training course within six months of employment.
  • Requires possession of a current Food Service Sanitation Certificate issued by the Illinois Department of Public Health, or requires possession of a Certified Food Protection Manager (CFPM) certification from a program accredited by the American National Standards Institute (ANSI) Conference for Food Protection (CFP).
  • Requires thorough knowledge of food service sanitation.
  • Requires extensive knowledge of institutional rules, regulations, and requirements for the control of offenders.
  • Requires working knowledge of food and nutritional values.
  • Requires ability to instruct and supervise offenders.
  • Requires ability to work in conformance with the provisions of the Illinois Food Service Sanitation rules and regulations pertaining to methods and procedures.
  • Requires ability to plan and lay out work according to requirements of assignment and to lead offenders by example and instruction.
  • Requires ability to judge quality of food,follow the master menu, and to estimate quantity of supplies/material needed.
  • Requires ability to maintain proper portion control of food items served.

  • Requires the ability to pass the IDOC/IDJJ background check. 
  • On January 1, 2020, the Cannabis Regulation and Tax Act made it legal for residents over the age of 21 to produce, consume and sell cannabis in Illinois. Please note that although the law has changed, the Department will continue to enforce the Department’s zero tolerance Drug Testing policy.  
  • The use of unauthorized drugs, including cannabis, by an employee, regardless of the position held is prohibited.
